The best way to start your day on a Disney trip is with Mickey waffles, right? Well, what if you could start every day with them — not just the ones that you’re on vacation? If that sounds like a dream, this Mickey pumpkin spice waffles recipe is for you! It might almost convince you that you’re heading to Magic Kingdom right after instead of work!

Mickey Waffles are a go-to breakfast for many Disney-goers. In fact, I can’t remember a time that I didn’t want one when I was visiting. And, luckily, Disney makes gluten-free Mickey Waffles upon request!

They’re a breakfast that I always miss when I’m at home counting down the days until my next Disney trip. So, I decided to try to recreate them in my own kitchen!

But, instead of going for a classic Mickey Waffle, I gave it a fall spin and made them gluten free pumpkin waffles — YUM! So, grab your PSL (and maybe a Minnie Mouse Halloween Bundt Cake too), it’s time to whip up the ultimate fall breakfast.

✨ Baking tips

  • Be careful not to overmix the pancake batter! You want to mix until the wet and dry ingredients are just mixed so that your pancakes are fluffy and not chewy.
  • Spray your waffle maker with a non-stick cooking spray before adding the waffle mix. This will ensure that you get every bit of that delicious Mickey waffle out without any trouble!
  • Don’t overfill your waffle maker with batter. It could take some trial and error to get the perfect amount in there. It’s better to underfill, so start conservatively.
  • Don’t open the waffle maker early! Wait the recommended amount of time for your specific waffle iron. It’s tempting to peek, but this will lower the temperature and make the cooking time longer.

Amazon sells several Mickey waffle makers with some that will give you the iconic Mickey outline, and others that feature a full-on Mickey face like this!

This Disney Mickey Mini Waffle Maker is my favorite to use whenever I make this recipe at home.

How do I make the pumpkin spice waffles dairy-free?

Making these Mickey pumpkin waffles dairy-free is simple! Just use your favorite plant-based milk and use vegan butter in place of the sweet cream butter.

What toppings can be used to make this recipe tree nut-free?

Because the waffle batter isn’t made with any nuts, it’s super easy to make this for those with a tree nut allergy. Just forego the chopped pecans on top and load up on the whipped cream, powdered sugar, and maple syrup!

If you want to go all out for breakfast with the family, you can also create a toppings bar and let everyone pick and choose what they want! This makes it easy to please those with and without tree nut allergies.

What can I substitute for the eggs?

When making the batter, replace each egg with 1/4 cup applesauce. So, you’ll use a total of 1/2 cup applesauce!

Can I use a different type of flour for the pumpkin spice waffles?

Of course! These pumpkin spice waffles can be made with any flour of your choosing including all-purpose flour, almond flour, or any other that you prefer.

They don’t have to be gluten free pumpkin waffles if you don’t need them to be! Just keep in mind that the taste may change slightly based on what you pick.

Ingredients

Mickey Pumpkin Waffles

  • 1 1/2 cup gluten-free flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp ground ginger
  • 1/2 tsp salt
  • 1 cup pumpkin puree
  • 2 large eggs
  • 3 tbsp sweet cream butter (melted)
  • 1/4 cup dark brown sugar (packed)
  • 1 cup whole milk (extra 1/3 cup whole milk is needed)
  • Mickey Waffle Iron

Toppings (Optional)

  • powdered sugar
  • fresh whipped cream
  • chopped pecans

Instructions

Mix Waffle Batter:

  • Prep the Mickey Waffle maker with nonstick baking spray.
  • Add flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a mixing bowl.
  • Whisk to blend all ingredients together.
  • Whisk to combine the pumpkin puree, eggs, sweet cream butter, brown sugar, and whole milk in a medium bowl.
  • In the center of the combined dry ingredients, form a well.
  • Pour the wet ingredients in the well.
  • Use an electric mixer set on low to combine them. (Don’t over mix.)
  • The mixture will be thick. If it is too thick to pour, add an additional ⅓ cup of whole milk.

Make Mickey Pumpkin Waffles:

  • Scoop the batter onto the prepared Mickey waffle iron.
  • Cook following the directions listed on the waffle iron.
  • Remove from the iron.
  • Serve.
