- This is my favorite Mickey Mouse cookie cutter to use when I make this recipe.
- To make cutting the Mickey pumpkin cut out cookies a bit easier, chill the dough in your fridge for at least an hour before you roll. This will reduce the stickiness of the dough and make it easier to manage.
- Dip the Micke Mouse cookie cutter into flour each time before pressing it into the dough. This will help minimize any sticking and give you the perfect Mickey pumpkin cookies shape.
- Be sure that your pumpkin shaped cookies are completely cool before icing.
- Patience is key! For the best results, let your completed cookies sit out overnight so that the icing has time to dry and set.

Decorating these Mickey pumpkin sugar cookies will require some focus, but you’ve totally got this!
First, follow all of the instructions to make the royal icing. Then, once your cookies are cooled it’s time to get busy decorating!
If you want your design to come out best, you’ll first need to use a black edible marker to draw out the lines of the pumpkin on the cookies. Take your time here because you’ll use these as a guide and trace these with your orange icing.
After you’ve got all the lines traced with the frosting, use a squeeze bottle to fill in all the pumpkin design. And, you’re done!

Can I make these cookies dairy-free?
Yes! Just use vegan butter in place of the sweet cream butter.
Is there a way to make the pumpkin cut out cookies without tree nuts?
Absolutely! Instead of using the almond extract, just use more vanilla extract. I would recommend an additional 2 tsp of pure vanilla extract to the recipe, though you can add more or less to your liking.
What can I substitute for the eggs?
There are a couple of ways to make the pumpkin shaped cookies egg-free. First, you could use a special egg substitute like Ener-G’s Egg Replacer.
If you don’t have time to order something special, you can replace the egg with baking powder and milk.
Avoid using some of the more common egg substitutes for baked goods like applesauce, as this could cause the dough to be wetter and make it difficult to cut.

Ingredients
Sugar Cookies
- 1 1/2 cups powdered sugar
- 1 large egg
- 1 tsp pure vanilla extract
- 1 tsp pure almond extract
- 1 cup unsalted sweet cream butter, softened
- 2 3/4 cups flour
- 1 tsp baking soda
- 1 tsp cream of tartar
- 1 3-inch Mickey Mouse head cookie cutter
Royal Icing
- 4 large egg whites
- 2 tsp cream of tartar
- 6 cups powdered sugar
- 1 tsp pure vanilla extract
- 1 tsp pure almond extract
- orange, brown, and green gel food coloring
- 3 disposable piping bags
- 2 #3 tips
- 1 #68 tip
- 1 edible black marker
Instructions
Make Sugar Cookies:
- Preheat oven to 350 degrees and line two cookie sheets with a silicone mat.
- Using a standing mixer, beat the powdered sugar, egg, vanilla, almond, and butter until light and fluffy.
- Using a medium bowl, whisk the flour, baking soda, and cream of tartar.
- Gradually beat in the dry ingredients into the wet ingredients until a dough forms.
- If the dough is still sticky, beat in ¼ C of flour into the dough until a non-sticky dough forms.
- Sprinkle flour onto a cutting board and roll out the cookie dough to about 1/4in thickness.
- Cut out the Mickey Mouse shapes and place onto the cookie sheet.
- Bake in the oven for 8 minutes.
- Remove from oven and allow to cool completely.
Make Royal Icing:
- Using a standing mixer, beat the egg whites, cream of tartar, pure vanilla extract, pure almond extract and powdered sugar until combined, and stiff with peaks.
- Continue to beat for about 6-7 minutes on medium speed.
- Scoop about 3 C of icing into 1 bowl and mix in a few drops of orange food coloring into the bowl.
- Scoop 1 C into the piping bag fitted with #3 tip.
- Mix in 1 tbsp of water into the rest of the orange icing and pour into a squeeze bottle.
- Scoop 1 C of the white icing into another bowl and mix in a few drops of the brown gel food coloring.
- Scoop the brown icing into the second piping bag with #3 tip.
- Using the rest of the white icing, mix in a few drops of green gel food coloring and scoop the icing into the third piping bag with #68 tip.
Decorate Cookie:
- Using the black edible marker, draw out the lines of the pumpkin on the cookies.
- Using the orange piping bag, pipe outlines of the pumpkin on the cookies.
- Using the squeeze bottle, fill in the pumpkins.
- Allow the orange icing to harden for an hour before piping a brown stem and green leaf.
- Allow to harden for a few hours before enjoying!
