Kronk’s Spinach Puffs

Ingredients
- 1 package Sweet Loren’s puff pastry dough thawed
- 1 tablespoon olive oil
- 1/2 small onion finely chopped
- 2 cloves garlic minced
- 2 cups fresh spinach chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 1/2 cup ricotta cheese
- 1/4 cup crumbled feta cheese
- 1 egg beaten (for egg wash)
Instructions
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft. Stir in the minced garlic and cook for 30 seconds. Add 2 cups chopped spinach, salt, pepper, and nutmeg. Cook until the spinach wilts and any moisture evaporates, about 2 minutes.
- Remove from heat and let cool slightly. Stir in ricotta and feta cheese.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Roll out the puff pastry dough on the lined baking sheet and cut it into 12 equal rectangles.
- Place a spoonful of the spinach-ricotta-feta filling in the center of each square. Fold two opposite corners over each other, forming a diamond shape. Press gently to seal the edges.
- Brush each puff lightly with the beaten egg to give it a golden shine. Bake for 18-22 minutes on the top rack of the oven, or until the puffs are golden brown and crisp. Let cool slightly before serving. Best enjoyed warm!
