What would you say if I told you mashed potatoes are one of Disney’s hidden gems? Well, it’s true! You can find the most scrumptious garlic parmesan mashed potatoes at Chef Mickey’s in Walt Disney World.
If you find yourself at Disney’s Contemporary Resort, you can taste silky mashed potatoes mixed with garlic and parmesan cheese, all while enjoying the company of Mickey and his friends.
But these potatoes are too good to enjoy just once in a blue moon. Luckily, they’re easy to make at home with simple ingredients!
The benefit of making these potatoes at home, beyond getting to enjoy them anytime you’d like, is that you can customize them to be totally allergy friendly. Be gone cross-contamination anxieties!

- Peel potatoes for silky mashed potatoes. Leave peels on if you prefer a more hearty mash.
- Pre-cook your minced garlic on low heat in a bit of butter or cooking oil to enhance the flavor.
- Rinsing your cooked potatoes with cold water will help get rid of excess starch (which can cause a grainy texture).
- Set out the butter and cream cheese a few hours before you plan to make the garlic mashed potatoes so that they are softened.
- Mash/blend your potatoes to your desired consistency. If you prefer a bit of texture, don’t overmix!
✨ How to make garlic parmesan mashed potatoes
Start by peeling 3 pounds of russet potatoes and cutting them into chunks. The smaller you cut your potatoes, the quicker they will cook!
Put your potato chunks into a large pot with cold water and boil. You’re going to want to cook your potatoes for 15-20 minutes or until they are fork-tender.
As your potatoes are boiling away, preheat your oven to 350°F. You can also prep your 9 x 13 baking dish by greasing it with nonstick cooking spray.
Once your potatoes are cooked, drain them in a colander and rinse them with cold water. Allow your potatoes to cool before adding them to a large mixing bowl.
To this bowl, also add minced garlic, softened cream cheese, softened butter, sour cream, and heavy cream. Take a potato masher or hand mixer and get combining! Blend your ingredients until combined and silky smooth.
Finally, fold in parmesan cheese and seasonings. Then, you’re ready to bake.
Spread your creamy mashed potatoes in your prepared baking dish and bake for 30 minutes (your cheese should be completely melted!).

Ingredients
Garlic Parmesan Mashed Potatoes:
- 3 lbs. russet potatoes (peeled and cut into chunks)
- 4 cloves garlic (minced)
- 4 oz. cream cheese (softened)
- 1/2 cup butter, softened
- 1/2 cup sour cream
- 1 cup heavy cream
- 1 cup shredded parmesan cheese
- 1 tsp basil
- 1 tsp parsley
- 1 tsp oregano
- salt and pepper (to taste)
Instructions
Make Mashed Potatoes:
- Place the potatoes in a large pot and cover with water.
- Bring to a boil and cook for 15 to 20 minutes, until the potatoes are fork tender.
- Transfer the cooked potatoes to a colander and rinse with cold water. Allow to cool to room temperature.
- Preheat the oven to 350°F and grease a 9×13 baking dish with nonstick cooking spray.
- Combine the potatoes, garlic, cream cheese, sour cream, and heavy cream in a large bowl.
- Use a potato masher or hand mixer to mash and blend the ingredients.
- Fold in the parmesan cheese, basil, parsley, oregano, salt and pepper.
