Well, what if I told you that you can make those very same cookies at home without using any eggs?

That’s right, these eggless chocolate chip cookies are not only inspired by Rapunzel’s favorite treat but they are also made to be more allergy-friendly.

But don’t let that fool you into thinking these cookies lack flavor – quite the opposite, actually!

Ingredients you’ll need to make Rapunzel cookies

  • Bob’s Red Mill 1:1 Gluten Free Baking Flour
  • Baking soda
  • Pinch of salt 
  • White granulated sugar 
  • Light brown sugar
  • Unsalted butter
  • Vanilla extract 
  • Milk
  • Chocolate chips

  • Make this recipe vegan by substituting milk and butter for plant-based versions. 
  • Get creative with fun mix-ins like dried fruit, shredded coconut, and nuts.
  • Chill your cookie dough for 30 minutes before baking to keep it from spreading out too much. 
  • Let cookies cool for a few minutes after removing them from the oven. Use a wire rack if you own one. Trust me, they’ll be too soft to handle when they’re hot.
  • Store your cookies in an airtight container for up to a week. These also freeze well, so you can enjoy them whenever you want! 

How to make eggless chocolate chip cookies

Hey there! Let’s get started on these delicious cookies. First, preheat your oven to 350°F and line a cookie sheet with parchment paper.

Step 1: Prep dry ingredients

Now, grab a bowl and mix together all the dry ingredients – flour, baking soda, and salt. Set it aside for a moment.

Step 2: Cream butter and sugars

In another bowl, beat the softened butter until it’s nice and creamy. You can use a mixer or do it by hand – totally up to you! Once the butter is smooth, add both sugars and beat until the mixture becomes fluffy.

Step 3: Add vanilla and milk

Time to add some flavor! Mix in the vanilla and milk. Then, slowly add the dry ingredients into the bowl, making sure everything is well combined.

Step 4: Fold in chocolate chips

Now, it’s chocolate time! Gently fold in those delicious chocolate chips. Yum!

Pop the dough into the fridge for about 30 minutes to chill. This will help the flavors meld together.

Once the dough is chilled, make some one-inch cookie dough balls. You can use a spoon or a mini scooper – whatever you have on hand.

Place the dough balls on the prepared baking sheet. Give them a little press to flatten them slightly.

I like baking with unsweetened almond milk and Earth Balance; they have similar consistencies to real milk and butter.

Can I use a different brand of gluten-free flour?

You can swap for a different flour brand. However, results are not guaranteed!

Each gluten-free flour is made from a unique mix of different grains, and they’re not all great for baking. 

I find that Bob’s Red Mill has the best track record when it comes to gluten-free baking across the board.

I can’t have any of the substitutes you listed; what can I use instead?

If you can’t have any of the substitutes listed for this recipe, don’t worry! You can still make these eggless chocolate chip cookies. Here are some alternatives you can try:

  • Use mashed bananas or applesauce as a binder instead of eggs.
  • Use almond milk or coconut milk instead of regular milk.
  • Substitute dairy-free butter for regular butter.
