Welcome to your magical journey into the world of baking! Today, we’re going to recreate an all-time favorite snack from our childhood, Little Debbie’s cosmic brownies. But with a whimsical twist – we’re shaping them like our beloved Disney character, Mickey!

These Mickey cosmic brownies aren’t only eye-catching, but they are also scrumptious with their gluten-free brownie base, a layer of homemade chocolate ganache, and a sprinkle of colorful rainbow crunch chips on top.

Vee’s baking tips:

  • Make sure to have a prepared pan by greasing it with butter or cooking spray before adding the brownie mix. This will prevent the brownies from sticking to the pan.
  • For that homemade cosmic brownies taste, make sure to use a recipe that has a fudgy and chewy texture.
  • If you want to make this little Debbie brownie recipe in advance, store them in an airtight container for up to 3 days. This will keep them fresh and gooey.
  • When making the chocolate ganache, make sure to use high-quality chocolate for a smooth and rich flavor. I used allergy-friendly semisweet chocolate chips.
  • For an extra touch of fun, use different Disney cookie cutters to make different character shapes!
  • Make brownie pops and use a popsicle stick to create a fun and easy-to-eat version of these Mickey cosmic brownies. It might be easier to hold and a bit less messy.

How to make fudgy brownies

To make this fudge brownie recipe, you’ll need a gluten-free brownie mix. I personally love Krusteaz but feel free to use your favorite brand!

Follow the instructions on the box, but instead of using a traditional baking pan, get creative and use a Mickey Mouse cookie cutter to shape your brownies. This step will bring a fun and personalized touch to your brownies!

How to make chocolate ganache

To get that perfect chocolate topping, I used a homemade chocolate ganache!

If you’ve never had or heard of ganache, don’t worry – it’s really simple to make.

All you need is:

My secret ingredient is adding a tablespoon of instant espresso powder to the heavy cream while it is heating up. This gives the ganache a deeper, richer chocolate flavor.

Once it is heated through, pour it over the chocolate chips in a bowl and let it sit for two minutes. Then mix until smooth and creamy.

It’s that easy!

How to decorate Mickey’s copycat cosmic brownies

Once you have cooled brownies and they have been cut into Mickey shapes, it’s time to decorate them with the colorful crunch chips!

Pour a spoonful of ganache on top of each brownie and spread it evenly with a knife or spatula. Then, sprinkle the rainbow chips on top while the chocolate is still warm so they stick.

You can also get creative and use different colored sprinkles or mini M&Ms for an extra touch of magic.

Instructions

Make Cosmic Brownies:

  • Preheat the oven to 325°F and spray a 9×9 baking pan with baking spray.
  • Lay a piece of parchment paper in the pan. 
  • In a large bowl, beat the water, oil, espresso powder, and egg until combined and fluffy.
  • Gradually beat in the brownie mix into the bowl of wet ingredients.
  • Spread the brownie batter onto the baking pan.
  • Bake in the oven for 40-45 minutes or until a toothpick in the center comes out clean.
  • Allow the brownies to cool completely.
  • Using the Mickey Mouse cookie cutter, cut out 6 mickey mouse heads and place them onto a wire rack.

Prepare Chocolate Ganache:

  • Using a small pot, bring the heavy whipping cream and espresso grounds to a simmer.
  • Pour over the chocolate chips into a medium bowl.
  • Whisk until the melted chocolate is smooth. 
  • Gradually pour the ganache over the Mickey brownies, making sure the tops and sides are completely covered.
  • Sprinkle the rainbow chips over the top and allow the ganache to harden. 
  • Serve and enjoy!
