The first step to your red velvet cakes is to prep your fondant accessories!
Begin by kneading and molding your fondant using the instructions down below. We’re going to be making Minnie Mouse bows and dots for cake toppers.
I use silicone molds for the perfect bow shape every time.
Once removed from the molds, allow your fondant to sit overnight.

Next, prepare your cream cheese frosting.
Mix your cream cheese frosting ingredients with a standing mixer until smooth. Add to a piping bag and set aside.
If you don’t have a stand mixer, a hand mixer will do the trick!
✨ How to bake red velvet mini bundt cake
Before you start baking, preheat your oven and prepare your mini bundt pans with some non-stick cooking spray.
Then, beat together your cake ingredients with an electric mixer and add the red velvet cake batter to the pans. Bake using the instructions down below and remove to cool.
While these cakes are sweet on their own, they look even cuter when decorated!
Melt white chocolate wafers using the instructions below (white chocolate chips would work as well). Then, add your mixture to a piping bag. Pipe over your bundt cakes and add some festive sprinkles, allowing the chocolate to harden slightly.

While this recipe doesn’t call for vinegar, many red velvet recipes do!
Though it may sound strange, it’s for good reason. Vinegar helps the cake to rise while baking; it reacts chemically with the added baking soda for some serious leavening power.
Fun fact – red velvet cake was traditionally colored with beet juice rather than red food coloring, which could turn blue when baked. Adding vinegar to these cakes kept the red beet color from turning.
Should I flour a bundt pan?
While some try flouring bundt pans to prevent sticking, this can actually make the cake stick more.
Flouring can cause excess sticking as well as a gummy outer texture to your bundt cake.

Ingredients
Fondant Ears & Bow Ingredients:
- 1 – 4 oz. package red fondant
- 1 – 4 oz. package black fondant
- 1 bow silicone mat
- 1 1/2 in. circle fondant cutter
- 1 cup powdered sugar
- 1 small paintbrush
- cutting board
Red Velvet Bundt Cake Ingredients:
- 1 box gluten-free red velvet cake mix
- 3/4 cup sour cream (room temperature)
- 1/2 cup canola oil
- 1/2 cup water
- 1/4 cup mayo
- 3 large eggs
- 2 tsp pure vanilla extract
Cream Cheese Frosting Ingredients:
- 1 – 8 oz. cream cheese (room temperature)
- 1/4 cup unsalted butter (softened)
- 2 1/2 cup powdered sugar
- 1 tsp pure vanilla extract
- 2 disposable piping bags
- star tip
Other Toppings:
- 2 cup white chocolate melting wafers
- 1 cup Christmas sprinkles
Instructions
Make Fondant Minnie Ears & Bow:
- Lightly dust a cutting board with powdered sugar.
- Using your hands, knead the red fondant until it is soft and easy to mold.
- Take the paintbrush and dip it into powdered sugar.
- Place the silicone mat onto the cutting board, and using the paintbrush, lightly dust the small bow mold. This helps keep the fondant from sticking to the mold.
- Pinch off about 1 ½ tsp of red fondant and push it into the bow mold.
- Allow it to set for 5 mins before carefully removing it from the mold.
- Place onto the cutting board and continue making 11 more bows.
- Allow the bows to sit overnight.
- Dust the cutting board again with a little bit of powdered sugar.
- Knead the black fondant until it is soft and easy to roll out.
- Once you roll the fondant out to ¼ in thickness and using the circle fondant cutter, cut out 24 circles and place them aside to sit out overnight.
Bake Red Velvet Mini Cakes:
- Preheat oven to 350°F and spray a mini bundt pan with pam baking spray and set aside.
- Using a standing mixer or hand mixer, beat together all cake ingredients until combined.
- Fill the bundt cavities ¾ way and bake in the oven for 21 minutes or until a toothpick comes out clean.
- Remove and place onto the counter and allow to cool for 15 minutes.
Add Melted Chocolate and Sprinkles:
- Using a medium microwave-safe bowl, melt the white chocolate melting wafers in 45-second increments, mixing after every 45 seconds.
- Spoon the white chocolate into the piping bag.
- Place the bundt cake onto a wire rack over a cookie sheet.
- Cut the piping bag with the white chocolate and pipe over the bundt cakes.
- Sprinkle Christmas sprinkles over the white chocolate.
- Allow to harden slightly.
Make Cream Cheese Frosting:
- Using a standing mixer, beat all ingredients until combined and smooth.
- Scoop into the piping bag and pipe a dollop into the center of the bundt cakes.
Assemble Minnie Red Velvet Bundt Cakes:
- Place two black circles on the side for the ears and a red bow in the center of the frosting.
