Honey Bee ‘Winnie The Pooh’ Cupcakes

When you think of snacking at Disney World, cupcakes are one of the most quintessential treats around! But, unfortunately, they’re not usually well-suited for those of us with food sensitivities or allergies. Well, now you don’t have to skip out on Disney-themed cupcakes covered in a tower of frosting! This Honey Bee ‘Winnie The Pooh’ Cupcakes recipe will make you feel like you just stepped out of the Main Street Confectionery!

I’ve been going to Disney World for YEARS, and I haven’t been able to find a cupcake that is allergy-friendly outside of Erin McKenna’s Bakery NYC in Disney Springs. So, I figured that it was about time that I created some over-the-top Disney cupcakes that are gluten-free, and why not make it a Winnie The Pooh Cupcake, right?

You can make these as Winnie The Pooh baby shower cupcakes or even for a kids’ birthday party — or not! Trust me, you’ll be finding any excuse to make these honey bee cupcakes after you get a taste!

This recipe is perfect for those who are:

✨ Baking tips

  • Prepare and bake the cinnamon cupcakes first and allow them to cool completely to room temperature before frosting. You don’t want that tasty frosting sliding right off!
  • Set out the butter and cream cheese a few hours before you plan to make the honey bee cupcakes so that they are softened.
  • Be careful not to overmix the batter. You want to mix the batter just until the dry and wet ingredients combine. Otherwise, you might end up with some tough cupcakes.
  • Invest in higher-quality, grease-proof cupcake liners. The few extra dollars will pay off when you don’t lose any precious bites because they’re sticking to the liner. Plus, bonus points for if you find liners that are Disney-themed to take these Winnie The Pooh cupcakes over the top!
  • Don’t overfill the cupcake liners with batter. Aim to fill each cup about 2/3rds.

✨ How to make cinnamon cupcakes

Preheat the oven to 350°F before you get started. Start by mixing the dry ingredients — following all of the instructions — and set it aside.

Combine all the wet ingredients and slowly fold them into the dry mixture until just combined. Be mindful not to overmix the batter!

Then it’s time to fill those cupcake liners 2/3rds of the way full and pop them into the oven following the baking instructions.

Remove the cupcakes from the oven and let them cool down before moving over to a cooling rack!

✨ How to make the honey cinnamon cream cheese frosting

While the cinnamon cupcakes cool, mix all the ingredients (carefully following the directions) in a mixing blow or stand mixer.

Add as little or as much yellow food coloring as you’d like. The more you add, the deeper that honey bee yellow will be!

To pipe the honey cinnamon cream cheese frosting onto the Winnie The Pooh cupcakes, you’ll want to create a large blob of frosting in the middle. Then, slowly pipe the frosting onto the cupcake in a circle around the blob to create that “beehive” look, and top with your decorations to complete the honey bee cupcake look!

Can I use a different type of flour?

Yes! Really any type of flour will work to create these cupcakes. I just chose to use the 1-to-1 gluten-free flour to keep this recipe gluten-free!

How do I make this recipe dairy-free?

You’ll need to make a few substitutions to make this recipe dairy-free, but it’s totally doable!

First, choose a dairy-free cream cheese and butter (there are lots of these available at grocery stores!), and select a plant-based milk option instead of using half-and-half to make the frosting. You’ll also want a replacement for the buttermilk, which can be done by mixing your favorite plant-based milk with lemon juice.

Ingredients

Instructions

Make Cupcakes:

  • Preheat oven to 350°F and spray or line a standard muffin tin.
  • Using a hand or stand mixer, cream the butter and sugar 1-2 minutes, or until light and fluffy.
  • Mix in your cream cheese, vanilla, buttermilk, and eggs and low until well incorporated.
  • Slowly mix in the honey and beat on medium for 1 minute.
  • In a separate bowl, combine the gluten free flour, baking powder, salt, and cinnamon. 
  • Fold the wet ingredients into the dry ingredients.
  • Add the cupcake batter into the muffin tin until each one is about 2/3 full.
  • Bake for 17-20 minutes, or until a toothpick comes out clean.
  • Allow the cupcakes to cool down completely before frosting.

Make Frosting:

  • In a large mixing bowl or stand mixer, cream together butter and cream cheese and beat until light and fluffy.
  • Add in the vanilla extract.
  • Slowly mix in the powdered sugar, 1 cup at a time, while adding a bit of milk in between each cup.
  • Continue to mix for 1 minute or until creamy.
  • Add in the cinnamon until well incorporated.
  • Add in your food coloring until it’s the right shade for you.

Frost Cupcakes:

  • Prepare the piping bag and fill the bag with frosting.
  • Pipe a small “blob tower” of icing in the middle of the cupcake.
  • Then, frost your “beehive” around the “blob”.
  • Decorate with your cute bumblebees.
  • Serve and enjoy!

  1. Hello,I’m making this recipe now and am wondering how much honey to put in the cupcakes? I see 1 tablespoon under frosting but it doesn’t state how much for the cupcakes themselves.

      So, for the actual cupcake recipe, I did not add any honey. Just in the frosting. BUT, if you want to add some more of that honey element, maybe a light drizzle over the the top could really pull in that honey bee look.
