Mickey Mouse Doubletree Cookies

Ingredients

Doubletree Mickey Cookies

  • 1 cup unsalted sweet cream butter softened
  • ¾ cup sugar
  • ¾ cup light brown sugar
  • 2 large eggs
  • 1 ¼ tsp pure vanilla extract
  • 2 1/2 cups 1-to-1 gluten-free flour
  • ½ cup old fashioned oats
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1 tsp ground cinnamon
  • 2 ½ cups semisweet chocolate chips
  • 1 ½ cups chopped walnuts
  • 1 3 in Mickey Mouse shaped cookie cutter

Instructions

Make Doubletree Mickey Mouse Cookies:

  • Preheat oven to 325 degrees and line two cookie sheets with parchment paper.
  • Using a large bowl, beat together the butter, sugar, brown sugar, eggs, and vanilla until combined and fluffy.
  • In a medium bowl, whisk the flour, oats, baking soda, baking powder, kosher salt, and cinnamon.
  • Gradually beat in the dry ingredients until combined.
  • Fold in the chocolate chips and chopped walnuts.
  • Touch the dough with your hands to see if it is still sticky, if so, mix in about ½ - ¾ C flour.
  • Sprinkle flour onto a cutting board and roll the cookie dough into ½ in thick.
  • Use the cookie cutter and cut out mickey mouse shapes.
  • Bake in the oven for 10-12 minutes or until the cookies are a light golden brown.
  • Remove from oven and allow to cool before eating.
  • Enjoy!
