Mickey Gluten Free Beignets

These gluten free beignets bring the magic of Disney’s French Quarter to your home kitchen. I’ve recreated this mouth-watering Disney classic with a totally allergy-friendly recipe. Enjoy golden fried pastry dusted with powdered sugar. You won’t want to share this one!

Ingredients

  • ½ cup warm water + 2 tbsp
  • 1 ½ tsp dry active yeast
  • ½ cup apple juice + 2 tbsp
  • ¼ cup unsweetened applesauce regular or cinnamon
  • 3 tbsp white granulated sugar
  • 2 ½ tsp powdered gluten-free egg replacer I like Bob’s Red Mill
  • ¼ tsp salt
  • ½ tsp canola oil
  • pinch ground cinnamon
  • 1 pound gluten-free pizza crust mix I like Bob’s Red Mill
  • vegetable oil for frying
  • confectioners sugar for dusting

Instructions

Make Beignet Dough:

  • Combine warm water and yeast in a small bowl. Set aside for 5 minutes. 
  • Combine apple juice, applesauce, sugar, egg replacer, salt, oil, and cinnamon in the bowl of an electric mixer fitted with the paddle attachment (like a Kitchen Aid mixer). Mix well until combined. 
  • Add pizza crust mix, ¼ cup at a time, until soft dough forms (won’t use all of the mix). 
  • Turn dough out onto table dusted with remaining pizza crust mix. Knead until dough is no longer sticky but still soft. 
  • Roll dough to ¼ inch thickness and cut using a mickey cookie cutter. 
  • Set aside at room temp for 20 minutes.

Fry Mickey Mouse Beignets:

  • Pour oil into a deep pot until it reaches 2 inches up sides.
  • Heat oil over medium heat to 350°F.
  • Lightly press beignets to slightly flatten.
  • Carefully add a few beignets to hot oil. Fry until golden brown on each side, flipping over once. 
  • Remove from hot oil with a slotted spoon onto a baking sheet with a few paper towels to soak up the oil. 
  • Dust with a generous amount of confectioners sugar and serve hot.
  • Enjoy!

Notes

  • Instead of powdered sugar, make your own cinnamon sugar to coat the beignets! 
  • Use regular applesauce or the cinnamon kind for an extra kick of flavor.
